Model - Tecnocompact XTRA Digital 6 GN 1/1 trays + rack stand + 21 gastro trays (6 non-stick deep trays, 6 sheets trays, 9 steel gastro trays) Tecnocompact XTRA digital ovens offer an immediate and intuitive cooking experience and work with convection (50-265°C), steam (50-120°C), with a combi cycle (50-250°C) and with automatic preheating and direct steam. Featuring an airtight AISI 304 stainless-steel chamber, deep drawn and welded, they guarantee uniform cooking using a deflector, fans with inverter technology that operate with four different speeds and 70 mm spacing between grills. Equipped with a programmable steam puff, which can be set to last up to 20 seconds, XTRA digital Tecnocompact ovens can manage up to 19 humidity levels at 5% intervals from 0% to 90%. The digital models feature a control panel with high-visibility colour LCD 3.5’’ display for clearly viewing recipes, cooking cycles and temperature and time settings. Tecnocompact XTRA ovens can manage up to 300 recipes, including preset recipes and customised recipes entered by the chef.
